Chicken Chatpati: Spicy, Tangy Indian Fried Chicken


Chicken Chatpati is a popular North Indian dish that combines tender chicken with a spicy, tangy masala. The chicken is marinated in a mix of Sunrise masalas and other flavourings, then fried till crisp outside and juicy within. Quick and simple to make, this recipe is sure to become a favourite. The Sunrise spice blends add authentic flavour in a snap.

Ingredients

  • Chicken (cut into medium pieces)

    500 g
  • Salt

    1 tsp
  • Sunrise Haldi (Turmeric) Powder

    1 tsp
  • Sunrise Dhania (Coriander) Powder

    1 tsp
  • Sunrise Jeera (Cumin) Powder

    1 tsp
  • Sunrise Lal Mirch (Red Chilli) Powder

    1 tsp
  • Sunrise Kali Mirch (Black Pepper) Powder

    1/2 tsp
  • Sugar

    1/2 tsp
  • Ginger-garlic paste

    2 tbsp
  • Tomato ketchup

    1 tbsp
  • Refined oil

    2 tbsp + for deep frying
  • Sunrise Kashmiri Mirch Powder

    1 tsp
  • Sunrise Garam Masala Powder

    1 tsp

Sunrise tip: Use Kashmiri mirch powder for its vibrant red colour without too much heat. Mix it into the marinade just before frying for the best results.

 

Steps

Step 1: Marinate the Chicken

Time: 10 minutes 

In a large bowl, mix the chicken with salt, Sunrise Haldi Powder, Sunrise Dhania Powder, Sunrise Jeera Powder, Sunrise Lal Mirch Powder, Sunrise Kali Mirch Powder, sugar, ginger-garlic paste, ketchup and 2 tbsp oil. Rub the marinade into the chicken pieces well. Set aside for 30 minutes.

 

Step 2: Fry the Marinated Chicken

Time: 15 minutes

Heat oil for deep frying in a kadai. While it heats up, mix the Sunrise Kashmiri Mirch Powder into the marinated chicken. Once the oil is hot, carefully add the chicken pieces. Fry on medium heat, turning occasionally, until crisp and golden.

 

Step 3: Cook the Chicken

Time: 20 minutes

Drain the excess oil from the fried chicken. Heat 2 tbsp oil in another pan. Add the fried chicken pieces. Toss well to coat. Cover and cook on low heat until the chicken releases water, around 10 minutes. Uncover, increase heat to medium and continue cooking until the water evaporates.

 

Step 4: Add Garam Masala

Time: 5 minutes

Sprinkle the Sunrise Garam Masala over the chicken. Stir well. Cover and cook for another 5 minutes on low heat until the chicken is fully cooked through. Check that the insides are no longer pink.

 

Step 5: Garnish and Serve

Garnish the Chicken Chatpati with chopped coriander leaves and lemon wedges. Serve hot with sliced onions and green chutney.
