Golden-crisp bread squares topped with a flavourful prawn paste and coated in crunchy panko - these Prawn Toasts are a guaranteed crowd-pleaser. With a kick of heat from chilli and black pepper, balanced by herbaceous notes of coriander and oregano garnish, each bite delivers a satisfying contrast of textures. Serve them hot with a creamy mayonnaise dip for a snack that vanishes in minutes.
Sunrise tip: For extra-crispy toasts, make sure the oil is hot before frying and avoid overcrowding the pan. This ensures the panko coating turns golden-brown without absorbing excess oil.
Time: 5 minutes
Remove all 4 sides of the bread slices. Then cut each slice into 4 small squares. Do it for all the slices, and set them aside once done.
Time: 5 minutes
In a bowl, take the prawns and add 1 egg, chilli flakes, oregano, cornflour, and salt. Mix all the ingredients well. Then add Sunrise Kali Mirch Powder and Sunrise Lal Mirch Powder, and mix well again.
Time: 5 minutes
In a bowl, take 2 eggs and add a pinch of salt. Then whip the eggs to mix the salt into the eggs and create a homogeneous mixture.
Time: 15 minutes
Take one small square of the sliced bread and dip one side into the egg mixture. On the coated side, place a single marinated prawn and liberally sprinkle some panko or breadcrumbs over the prawn. Press the prawn into the bread lightly so it sticks better. Top with a sprinkle of the Sunrise Black Cumin Seeds.
Prepare all the bread squares in this way and then let all the squares rest for 5-10 minutes.
Time: 20 minutes
Heat 1-inch oil in a frying pan. Once hot, turn down the heat to medium and carefully place the bread squares, prawn side down, in the oil. Fry on medium heat for 2-3 minutes until golden-brown. Flip and fry the other side for 1-2 minutes. Drain on paper towels once the other side turns the same shade of golden-brown.
Time: 5 minutes
Arrange the fried prawn toasts on a serving platter. Sprinkle chopped coriander leaves and a pinch of chilli flakes and oregano on top. Serve immediately with mayonnaise for dipping.
Accompaniment: Sweet chilli sauce, ketchup, or sriracha mayo
Drinks: Ideal to be had with evening tea or as a party snack with cold aerated beverages.
