About Spicy Mustard-Chilli Mayo


Fiery red and bursting with bold flavours, this Spicy Mustard-Chilli Mayo is an instant Indian twist on plain mayo. Red chillies lend their vibrant hue and smoky kick, while mustard powder adds sharpness and depth. The zesty lemon juice rounds out the spices. Drizzle this spicy, tangy mayo over sandwiches and wraps, or serve as a dip with pakoras, kebabs and finger foods. The 15-minute recipe makes enough for 3 people.

 

Ingredients

  • Mayonnaise

    200 g
  • Sunrise Red Chilli Powder

    15 g
  • Sunrise Mustard powder

    20 g
  • Sunrise Cumin Powder

    10 g
  • Sunrise Ginger Powder

    10 g
  • Lemon juice (freshly squeezed)

    ½ lemon
  • Salt

    1/4 tsp or to taste
  • Green chilli (chopped)

    10 g
  • Honey

    20 ml
  • Lukewarm water

    50 ml

Sunrise tip: For an even spicier dip, add 1/4 tsp of freshly cracked black pepper.


Steps

Step 1: Prepare the mustard powder slurry

Time: 10 minutes

In a bowl, add Sunrise Mustard powder, salt to taste, and lukewarm water.

Mix well and keep for 10 to 15 minutes before adding to the mayo mixture.


Step 2: Combine all ingredients

Time: 2 minutes

In a mixing bowl, add mayonnaise, Sunrise Ginger powder, salt to taste, Sunrise Red Chilli powder and Sunrise Cumin powder.

Then, add chopped green chillies, lemon juice, the previously prepared Mustard slurry and honey. Whisk everything together until smooth and thoroughly combined.


Step 3: Taste and adjust seasoning

Time: 1 minute

Sprinkle more chilli powder for extra heat, lemon juice for tanginess, salt for flavour, or a drop of honey to balance the spice.

Transfer the spicy mustard-chilli mayo to a serving bowl.


Step 4: Garnish and refrigerate

Time: 2 minutes

Sprinkle chopped coriander leaves on top. Cover and refrigerate for at least 30 minutes before serving, to let the flavours meld. The dip tastes best chilled.
