Tawa Sabji is a vibrant, robust vegetable stir-fry that's a popular street food across India. Diced potatoes, carrots, beans, and other veggies are fried until crisp, then tossed in a spicy onion-tomato masala gravy. Tangy, piquant, and full of texture, this veg tawa fry makes a filling, flavourful side dish or appetiser.
Sunrise tip: For the crispiest fried veggies, make sure to pat them completely dry with a kitchen towel before frying. Any moisture will make them soggy.
Time: 20 minutes
Heat refined oil in a kadai or deep pan. Fry the paneer until golden brown. Keep it aside in a bowl after frying.
In the same oil, add potato, carrot, beans, capsicum and cauliflower. Deep fry them until golden and crisp, but not overcooked.
Drain on a paper towel and set aside in a bowl.
Time: 10 minutes
Take another pan/ wok and heat Sunrise Mustard oil.
Add whole cumin, dry red chillies, ginger paste, finely chopped onion, tomato puree, Sunrise Sabji Masala, white paste, and stir-fry for 2-3 minutes until fragrant.
Add water and cook for 3-5 minutes.
Time: 10 minutes
Add the fried vegetables to the masala. Toss and stir well to evenly coat the veggies with the spiced gravy.
Cook for 5 minutes to let the flavours meld.
Sprinkle in corn, peas and fried paneer on top of it.
Time: 2 minutes
Now, sprinkle some salt to taste, pour in some ghee, add Sunrise Shahi Garam Masala and give it a final stir.
Garnish generously with chopped fresh coriander leaves, if needed. Serve piping hot.
